These small Green Asparagus Flans are light and fluffy. They can be served hot, warm or cold. Asparagus needs very little to accompany it as the spears are so particularly flavourful.
First, here is the list of the different ingredients you will need to make the Green Asparagus Flans that serves 6
- 600 g or 16 oz green Asparagus
- 4 free range eggs
- 200 g or 7 oz whipping cream
- 1 garlic clove, crushed
- 1 pinch nutmeg
- 2 Tbsp olive oil
- 50 g or 3 Tbsp butter
- salt and white pepper
Now, here are the few steps you will need to follow to make the Green Asparagus Flans
Peel the asparagus. Keep some for decoration. Cut the rest in half lengthwise then chop in small sections. Cook the asparagus for 7 to 8 minutes in a pan in hot olive oil with the clove of garlic. Put some salt, pepper and remove from heat. Let cool.
Preheat the oven to 200 °C or 400°F . Break the eggs in a terrine. Whisk them and season with salt, pepper and nutmeg. Add the chopped asparagus, cooled and perfectly drained.
Divide this mixture into 6 large buttered ramekins. Put them in a warm bain-marie and bake. Cook for about 20 minutes.
Unmould the flans on plates and surround them with reserved asparagus and serve immediately if you like them hot or after a couple of minutes if you prefer them warm.
