Here is the list of the different ingredients you will need to prepare the Fennel Salad with Capers and Almonds that serves 4
- 1 fennel bulb
- 2 Tbsp lemon juice
- 3 Tbsp Olive oil
- 2 Tbsp Chopped parsley
- 1 Tbsp Coarsely chopped capers
- Salt and freshly ground pepper
- 4 Tbsp grilled almonds
- Some black olives (optional)
Here are now the few steps to will need to follow to prepare the Fennel Salad with Capers and Almonds
First, slice your Fennel bulb thinly with the mandolin. Then, prepare a “vinaigrette” with the 2 tablespoons lemon juice, the 3 tablespoons olive oil, 2 tbsp Chopped parsley and the tablespoon of capers. Mix well and set aside.
Then, spread out your fennel bulb nicely on your 4 plates and sprinkle the plates with your vinaigrette and salt and pepper on top. Finally, sprinkle your plates with 2 tablespoons toasted almonds and serve with thin slices of Parmesan or even better, some pecorino if you can find some and enjoy with some sourdough bread.
