First, here is the list of the different ingredients you will need to make the Red Lentil and Carrot Cake that serves 6 to 8 people
- 350 g Red Split lentils
- two large carrots, diced
- a chopped onion and 5 garlic cloves, pressed
- 2 Tbsp olive oil
- 5 eggs
- 150 g grated Comté
- 70 g bread crumbs
- 50 g of hazelnuts (optional)
- 1 teaspoon of turmeric
Now here are the few steps you will need to follow to make the Red Lentil and Carrot Cake with a preparation time of 20 minutes and a cooking time of 45 minutes
Cook the lentils in a large volume of water for 10 to 15 minutes. Drain and set aside.
In a frying pan, sauté the onion in olive oil and when it begins to become golden, add the carrots and the garlic. Season with salt and pepper and continue cooking for 5 more minutes.
In a large bowl, beat the eggs with the grated cheese and bread crumbs. Add the well-drained lentils, carrots and spices. Mix well. Pour everything into a large buttered and floured cake tin. Sprinkle with chopped hazelnuts if you like and bake in a preheated oven at 170 °C or 335°F for 45 minutes.
