Celeriac is an unloved yet delicious vegetable. We love our grandmothers’ ones so much, first blanched, then browned with a sauce. This time, let’s add a touch of sunshine to our Creamy Celeriac Soup for this winter soup!
First, here is the list of the different ingredients you will need to prepare this Creamy Celeriac Soup
- 3 onions
- 2 garlic cloves
- 1/2 celeriac
- 1 liter or 4 cups chicken stock
- 1 potato
- a tablespoon olive oil
- Salt and pepper from the mill
Now, here are the few steps you will need to follow to make this Creamy Celeriac soup with a preparation time of 10 minutes and a cooking time of 20 minutes.
In a large saucepan, brown the 3 onions, peeled and cut into small pieces, as well as the peeled and de-germed garlic cloves in a tablespoon of olive oil.
Add the peeled, washed and diced half celeriac. Brown them for 2 minutes then add the chicken stock. Add your peeled and cut into pieces potato. Add salt and pepper.
Leave to simmer for 20 minutes. When all the vegetables are cooked, mix them and adjust the seasoning if necessary.
Add a tablespoon of dried tomato pesto to each plate before serving.
