First, bring a large pot of water to a rolling boil, add 2 Tbsp salt. Boil the Lobster tails for 1 minute per ounce. ( A 5-ounce tail needs 5 minutes cooking time. Prepare an ice bath for dipping the tails right after cooking.
Once the tails are cooked, let them sit in the ice bath until they can be handled. Take each tail out of the ice bath and drain off any liquids. Grab a good pair of scissors and cut the shells all the way along the back of the tail. Pry apart the shell and pull out the lobster meat onto a clean working station.
