Gnocchi, a great classic of Italian cuisine of course! So, we like it or we like it less, but in this seasonal recipe, the sweet potato is in the spotlight by making my Gnocchi with cooked and mashed sweet potatoes. You see, it’s easy and so good! The ideal family dish.

First, here is the list of the different ingredients you will need to prepare the Sweet Potato Gnocchi that serves 6 people

  • 600 g or 2 1/2 cups sweet potatoes
  • 1 egg yolk
  • 150 g or 2/3 cup fluid flour + a little
  • 100 g or 1/2 cup cornstarch
  • 1 pinch of nutmeg and 2 pinches of four spices (optional)
  • 30 g or 2 Tbsp butter
  • 150 ml or 2/3 cup whipping cream

Now, here are the few steps you will need to follow to make these Sweet Potato Gnocchis with a 30 minutes preparation time and a 20 minutes cooking time + 15 minutes rest

Peel the sweet potatoes and cut them into large wedges. Steam them for about 20 minutes. Immediately mash the potatoes using a potato masher or a large fork. Add the egg yolk, flour, cornstarch and spices. Salt and mix.

Form a ball of dough, let cool at room temperature. Divide the dough into 4 pieces and roll each piece into a long sausage. On a floured work surface, cut into small pieces about 1 cm or 1/2 inch long. Roll them into small balls, sprinkle them with flour and score them with the tines of a fork.

Boil a large pot of salted water and plunge the gnocchis into it for a few seconds. They are cooked when they rise to the surface. Remove them immediately using a skimmer. Drain them and place them gradually in a large deep dish. Add the butter and cream, sprinkle with four spices, pepper and serve immediately.

Tip: If you have any dough left, freeze it.
