This Parmesan and Walnut Risotto is a very simple but delicious Risotto recipe. It can be accompanied depending on the moment with a simple slice of ham but also why not with a nice slice of pan-fried foie gras. First of all, here is the list of different ingredients you will need to prepare this Parmesan and Walnut Risotto for 4 people
- 350 g of Risotto rice
- 1.5 liters of chicken stock
- 50 g of mascarpone
- 100 ml dry white wine
- 1 onion
- 150 g Parmesan
- 50 g walnut
- 2 tbsp of Olive oil
- Salt and pepper from the mill
Now, here are the few steps you will need to follow to make this Parmesan and Walnut Risotto with a preparation time of 20 minutes and a cooking time of 30 minutes.
Bring the broth to a simmer in a saucepan. Make shavings on a third of the parmesan with a peeler and grate the rest. Roughly chop the walnuts.
Brown the chopped onion in a frying pan with the Olive oil for about 3 minutes. Add the rice and light brown it. Deglaze with the white wine and start to add a few ladles of broth. Stir over medium heat and let the rice absorb the broth before adding more gradually.
Halfway through, add half of the grated parmesan. Continue integrating the broth.
At the end, add the mascarpone, the rest of your grated parmesan and mix well to obtain a smooth rice. Restore the seasoning.
Arrange the Risotto in bowls, add the parmesan shavings and walnuts and enjoy.
