This Sweet Potato and Duck Confit Gratin is THE ideal family dish to help feast the family without the hustle. Sweet potatoes are full of dietary fibres, and low in calories. Finally, as Duck meat is “confit” it is also easy to digest.
Here are all the ingredients you will need to cook this Sweet Potato and Duck Confit Gratin that serves 4
- 1 1/4 lb (500 g) Duck confit
- 2 small lb (800 g) Sweet Potatoes
- 3 shallots, peeled and sliced
- 1 bunch fresh coriander
- 2 oz (50 g) breadcrumbs
- 3 small Tbsp (5 cl) Olive oil
- Salt and freshly ground pepper
Now here are the different steps you will have to follow to make the Sweet Potatoes and Duck Confit Gratin with a 20 minutes preparation time and a 20 minutes cooking time
Peel and cut the sweet potatoes into pieces. Put them to bake in a steamer for 15 minutes. Meanwhile, brown the minced shallots in a frying pan with the olive oil. Salt and pepper.
Simmer the duck flesh and add it to the pan. Lightly brown 5 minutes while mixing.
Preheat your oven to 375°F (180 °C). Drain the sweet potatoes and crush them with a fork. Add the chopped fresh coriander in this puree. Place the duck confit in the bottom of a gratin dish. Spread the mashed sweet potatoes on top, smooth the surface and sprinkle with breadcrumbs.
Place small pieces of butter on top and put the gratin dish for 20 minutes in the oven. Remove the gratin from the oven and serve immediately.
