- 600 g or 1 1/4 lb rabbit meat (saddle and thighs)
- 2 shallots
- 50 g or 2 oz butter
- 1 egg yolk
- 200 ml or 1 small cup dry white wine
- 120 ml or 4 fl whipping cream
- 1 tsp of Espelette Pepper
- Salt and pepper from the mill
Now, here are the few steps you will need to follow to make this Rabbit Fricassee with Espelette Pepper with a 15 minutes preparation time and a 30 minutes or so cooking time
Peel and chop the shallots. Cut the rabbit pieces into strips.
In a casserole dish, melt the butter, brown the rabbit pieces, add the shallots and brown them. Add salt and pepper. Pour in the white wine. As soon as the first bubbles appear, add the Espelette pepper. Stir everything well.
Close the lid of your casserole dish and simmer for 20 minutes maximum.
In a salad bowl, beat the egg yolk with the whipping cream. Open your casserole dish.
