These Chicken Ballotines with Chestnuts and Honey are a winter recipe but also a festive recipe. So to change from Turkey, Capon or even Game, here is a simpler but equally tasty way to share a family meal full of roundness and sweetness.

 

First, here is the list of the different ingredients that you will need to prepare these Chicken Ballotines with Chestnuts and Honey that serves 4 People

  • 4 Free-range Chicken Fillets + 1 small chicken Fillet for the stuffing
  • 100 g  canned chestnuts
  • 150 g  button mushrooms
  • 2 garlic cloves, 1 onion and a shallot
  • 1 egg
  • 2 tbsp olive oil
  • 3 tbsp  honey
  • 40 g  butter
  • 200 ml whipping cream
  • 40 ml Armagnac and 400 ml dry white wine
  • 1 tsp cider vinegar

Now, here are the few steps that you will need to follow to make these Chicken Ballotines with Chestnuts and Honey with 30 minutes preparation time and 35 minutes cooking time

Rinse the mushrooms. Peel them and chop them with a peeled garlic clove. Brown them in a pan with some olive oil.

Mix the small Chicken Fillet, chestnuts, one Tbsp Honey, the egg and the peeled and cut onion. Add the mushrooms with the garlic. Salt and pepper.

Incise or slit the center of the 4 chicken fillets and stuff them with the stuffing mixture. Wrap them in cling film to form 4 “sausages” and steam them for 10 to 12 minutes.

Meanwhile, make the sauce.

Peel the second garlic clove and the shallot. Slice them finely and brown them in half the butter. Deglaze with the Armagnac alcohol and reduce until you obtain a syrupy consistency. Salt and add the white wine and a second tablespoon of honey. Reduce by half.

Eventually, add the whipping cream and simmer for a few minutes. Filter then add a dash of cider vinegar. Keep warm.

Brown the Chicken Ballotines in the remaining butter. When they are golden brown on all sides, cut them into thick slices and arrange on a plate with the garnish of your choice. Serve and Enjoy !

 

Conclusion : If you have some leftover Chestnuts, add them to the chicken Ballotines to warm up and serve on a side.
