- 1 1/4 lb (500 g) fresh spinach
- 2 fennel bulbs
- 4 garlic cloves
- 4 Tbsp white wine vinegar
- 1 untreated orange
- 1 small bunch of fresh coriander leaves
- Fine salt and freshly ground pepper
- 10 gr coriander seeds

First, start your cooking by Washing your spinach with vinegar water, then pat dry. Grate the orange and extract the juice. then, cut the fennels into thin slices.
