I give you here a recipe to make a good French classic Potato Pie but with fish. Here, with strips of smoked salmon. You can do the same with leftover from a raw salmon fillet.
First, here is the list of the different ingredients you will need to prepare Smoked Salmon Potato Pie or Brandade that serves 4 people
- 1 kg or 2 lb potatoes
- 400 ml or 14 oz milk
- 40g or 2 Tbsp butter
- 2 Tbsp olive oil
- 2 sweet onions
- 300 g or 11 oz smoked salmon
- 40g oe 2 Tbsp fine breadcrumbs
- 2 cloves garlic
Now, here are the few steps you will need to follow to make this Smoked Salmon Brandade with a preparation time of 30 minutes and a cooking time of 45 minutes.
Start by cutting your smoked salmon into strips. In a saucepan, pour the milk, 150 g of smoked salmon then bring to the boil. Leave to infuse for 20 minutes. (Do not filter).
Peel the potatoes, cut them into large cubes. Put them in a large pot of cold water, salt and cook for about 30 minutes until they are cooked through.
Drain them, pass them through a purée mill and finish in the saucepan with the salmon milk and butter.
Peel the garlic cloves, chop them and mix them with the potato puree. Peel the onions and slice them finely. In a saucepan, pour the olive oil and onions. Cook for 10 minutes without browning and add the rest of the smoked salmon.
Arrange the salmon and onions on the base of a dish, put the salmon puree on top, a little breadcrumbs then spend about 20 minutes in the oven preheated to 180°C or 345°F to brown.
Enjoy with a big green salad!
