This Salmon à la Provençale recipe is very easy to make. Let’s shake up the traditions a little and serve this salmon with rice, tomatoes and fresh herbs. Salmon is a fatty fish rich in flavour that supports red wine very well, so why not choose one and Bon Appétit !
First here is the list of the different ingredients you will need to prepare the Salmon à la Provençale that serves for 4 to 6
- 1 salmon fillet of about 550 g or 1 1/4 lb
- 220 g or 8 oz rice
- 180 g or 6 oz button mushrooms ( optional)
- 3 large tomatoes
- 1 liter or 1 3/4 Pints vegetable broth
- 1 garlic clove and 1 bunch of parsley
- Oil, salt and freshly ground pepper
Now, here are the few steps that you will have to follow to make the Salmon à la Provençale with a Cooking time of about 45 minutes
Start by peeling the mushrooms and then slice them thinly (optional). Peel the garlic, chop the parsley. In a salad bowl, mix them with the rice. Slice the tomatoes.
Preheat the oven to 200 °C or 400°F. Oil the bottom of a baking dish and place the salmon fillet in it. Add the rice around and cover with tomato slices. Add some Salt and pepper.
Pour the broth into the dish until you cover all the ingredients. Bake for about 45 minutes or until the liquid is completely evaporated and the top is lightly golden.
