To make this nice Hake with Tarragon and Orange recipe, make sure you use well-flavoured tarragon as it makes all the difference to the finish dish. Now, the orange zest adds a fine and chic finish !
Here are all the Ingredients you will need to make the Hake with Tarragon and orange recipe for 4 people
- 4 slices or fillets of Hake
- 30 g (1 oz) butter
- 4 sprigs of tarragon
- 150 ml ( 2/3 cup) milk
- 1 tsp finely chopped tarragon
- 1 tsp finely grated zest of orange
- 4 Tbsp double cream
- 3 pinch of salt and freshly grated pepper
You will then follow these few steps to make the Hake with Tarragon and orange recipe
Spread half the butter generously over a shallow ovenproof dish large enough to hold the fish in a single layer. Put in the fish and season lightly. Place a sprig of tarragon on each slice of fish and pour in the milk. Dot the fish with the remaining butter and cover the dish with a buttered paper.
Cook in a moderate oven (350°F) for 30 minutes or until the fish is opaque to white. Pour the cooking liquor into a small pan and keep the fish warm, covered by the buttered paper, in the cooking dish.
Add the chopped tarragon and the orange zest to the cooking liquor and simmer for 2 minutes. Stir in the cream and warm through. Check the seasoning by tasting the sauce. Spoon the sauce over the fish and serve.
