Lorraine Quiche is one of the great classics of French provincial cuisine. Its origins date back to the 16th century. So I’m giving you here the recipe I received from my Lorraine family because there are many Lorraine quiche recipes. With bacon, with strips of ham, with or without grated gruyere. So it’s up to you to choose.
First, here is the list of the different ingredients you will need to prepare this Quiche Lorraine for 4 to 6 people, depending on your appetite!
- 200 g shortcrust pastry (see Tips/ Astuces)
- 150 g of smoked bacon or strips of white ham
- 300 ml fresh cream
- 4 big free range eggs
- Salt and pepper from the mill
- 1 pinch of nutmeg
Now, here are the few steps you will need to follow to make this Quiche Lorraine with a preparation time of 20 minutes and a cooking time of 40 minutes.
Start by making a shortcrust pastry also called pie crust. Place a pie dish with a non-moving base. Prick the dough with small pieces of bacon cut into cubes and which you have previously browned in a frying pan then blotted on a paper towel. (to make only with the bacon).
Preheat your oven to 200°C or 400°F. In a big bowl, beat the whole eggs like an omelette. Add the crème fraîche and season.
Pour this mixture onto the dough. Place in a hot oven and cook for 40 to 45 minutes. Once out of the oven, leave your quiche waiting for a few minutes then place it onto a nice serving dish and serve immediately with a big green salad.
