These Three Chocolate Verrines are a must. This impressive dessert uses the classic combination of different chocolate flavours. it is simple to make but use a good quality of chocolate to be sure to get a perfect mousse !

- 3 1/2 oz (100 g) dark chocolate at 70°
- 3 1/2 oz (100 g) milk chocolate
- 3 1/2 oz (100 g) white chocolate
- 2 free range eggs
- 2/3 cup or 200 ml double cream
Now, here are the different steps you will need to follow to make the Three Chocolate Verrines
First, In a bowl, break the dark chocolate in small pieces. Heat 100 ml ( 1/2 cup) cream in a small saucepan. Bring to the boil, remove from heat and pour over the chocolate pieces. Mix well until mixture is completely smooth and shiny. Pour into small glasses about 2 cm thick and chill.
Then, melt the white chocolate in a double boiler and stir until the chocolate is melted. Set aside. In another bowl, beat the remaining cream into stiff whipped cream. Stir vigorously 1/3 of the whipped cream with the melted white chocolate for an even mixture.Then gently fold in the remaining whipped cream to this mixture. Divide the mousse into the glasses over the dark chocolate and place in the fridge again for about one hour.
Finally, in an other bowl, melt the milk chocolate with 2 tablespoons water for 2 minutes or until the chocolate is completely melted. Add the beaten egg yolks and mix. Beat the egg whites until stiff and fold into the chocolate. Divide the mousse into the glasses over the white chocolate mousse.
Chill for 3 hours. Then, before serving, make shavings of dark chocolate or white chocolate with a peeler and decorate the top of each glass verrines with it. Your verrines are ready to serve.
