This Lemon Mousse is a beautiful mousse with a delicate texture. It will be perfect at the end of a rather copious end-of-year meal. This Mousse is not only light but also easy to make!
First, here is the list of the different ingredients you will need to prepare this Lemon Mousse that serves 4 to 6 People
- 20 g or 1 oz butter
- 100 g or 4 oz caster sugar
- 30 g or 1 1/2 oz cornstarch
- 3 free range eggs
- 2 lemons
- 1 glass of water (about 200 ml / about 1 cup)
Now, here are the few steps you will need to follow to make this Lemon Mousse with 15 minutes of preparation and about 2 hours of refrigeration
Start by separating the egg whites from the yolks.
Mix the yolks, caster sugar, cornstarch in a saucepan and dilute with the water.
Squeeze the juice of the 2 lemons and add it to your saucepan. Thicken over low heat, stirring constantly.
Remove the pan from the heat before boiling and add the butter. Leave to cool.
Meanwhile, beat the egg whites until stiff. Gently add them to the lemon cream.
Pour your mixture into a pretty glass bowl or individual bowls and refrigerate until ready to serve.
