A great classic, on the verge of trivialization because of all the bad imitations. So here is a more than classic recipe, but with dark chocolate, just to show you once again how much I love dark chocolate…
First here is the list of the different ingredients you will need to prepare this Chocolate Tiramisu that serves 6 people
- 250 ml or 9 oz strong lukewarm coffee
- 6 eggs from which you will have separated the whites from the yolks
- 110 g or 4,5 oz caster sugar
- 500 g or 1 lb mascarpone
- 30 sponge fingers
- 4 tbsp dark cocoa powder
- 200 g or 7 oz dark chocolate
Now, here are the different steps you will need to follow to make this Chocolate Tiramisu with a preparation time of 30 minutes and a cooling time of about 3 to 4 hours
Beat the yolks with the caster sugar until the mixture whitens. Incorporate the Mascarpone while continuing to beat. Beat 3 of the egg whites until stiff and add them to the Mascarpone/egg/sugar mixture.
Quickly dip the sponge fingers in the coffee mixture and place them at the bottom of the container(s). Melt the chocolate in the microwave or, better, in a bain-marie. ( water bath).
Cover with cream and then a thin layer of melted chocolate. Repeat the operation to make the second layer.
Cover with cling film and leave to cool for at least 3 hours in the refrigerator.
Sprinkle with cocoa powder just before serving.
