These Chestnut Parfaits are the ideal dessert for the end of year. You will amaze your friends by offering them this dessert. The perfect dessert that you can also serve by putting the cups in the freezer to serve them frozen. But in this case, take them out an hour before serving them.

- 4 egg yolks
- 2/3 cup or 100 g sugar
- 2/3 cup or 200 ml milk
- 1 cup or 250 ml whipping cream
- 1 cup or 250 g chestnut cream
- 1 espresso of about 1 oz or 25 ml
- 4 sheets gelatine (about 6 g) or 4 teaspoons agar agar
- a little icing sugar, optional
Now, here are the few steps you will need to follow to make the Chestnut Parfaits with a preparation time of 20 minutes
First, Soften the gelatine in a bowl of cold water. Heat the milk with the Chestnut cream, then add the coffee.
Whisk the egg yolks with the sugar minus 1 Tbsp and pour the hot milk over. Finally, put everything back in a saucepan and cook for 4 to 5 minutes while stirring. Off the heat, add the drained gelatine and let cool.
Then whip the whipped cream by adding the remaining sugar at the end and mix it with the cooled cream.
Finally, pour into cups and chill for about 4 hours. When serving, sprinkle with icing sugar.
