This Soft Chocolate Zucchini Cake is one of those recipes that strikes the right balance between what is good for the body and what is good in the mouth. Savor without remorse this delicious cake without sugar but ultra gourmet all the same!
First of all, here is the list of the different ingredients you will need to prepare the Moelleux Chocolate Zucchini for about 8 parts
- 50 g or 1/4 cup date paste
- 250 g or 1 1/4 cup raw zucchini (one medium zucchini)
- 250 g or 1 1/4 cup 55% cocoa pastry chocolate
- 90 g or 4 oz flour type 80 (or classic)
- 8g or 2 tsp baking powder
- 2 free range eggs
Now, here are the different steps you will need to follow to make this Soft Chocolat Zucchini Cake with 20 minutes preparation time and 20 minutes cooking time
First soak the date paste for 15 minutes in a bowl of water. Grate the raw zucchini then mix it with the drained date paste.
Preheat your oven to 160°C or 325°F. Pour everything into a large bowl and add the chocolate that you have melted in a bain-marie before.
Beat your eggs until well blended and add your chocolate zucchini mixture. Finally incorporate the flour mixed with the baking powder and whisk until obtaining a homogeneous and unctuous batter.
Pour everything into an oiled mold of 20 cm in diameter and bake for 20 minutes.
Once out of the oven, wait for the cake to cool before un-molding it. Finally, if you like, you can opt for a vegan chocolate ganache : It will be made with 100 g or 4 oz Soy cream and 80 g or 3 oz pastry chocolate, to stay healthy.
Heat the Soy cream and dark chocolate together in a small saucepan. Before serving, you will spread it on the cake.
