The Rhubarb Crumble is a typically Spring and British dessert. Light, sweet and tangy at the same time its perfect with a dash of Spice if you wish !

- 400 g ( 2 cups) rhubarb, trimmed and sliced into pieces
- 100 g ( 3.75 ounces) caster sugar
- 200 g (7 ounces) plain flour
- 100 g ( 3.75 ounces) cold butter, cubed
- 120 g ( 1/2 cup) light brown sugar
Here are also the few steps you will need to follow to prepare the Rhubarb Crumble
Preheat the oven to 180°C ( 370°F). Place the rhubarb in a ovenproof dish, add about 50 ml ( 1/4 cup), water, optional, then sprinkle over the caster sugar.
Sift the flour into a bowl, add the butter then rub in with your fingertips until the mixture resembles breadcrumbs. Alternatively, pulse in a food processor. Stir in the brown sugar, (also called Demerara sugar, well known in Britain and named after its place of origin, Demerara, in Guyana.)
Spread the crumble mixture over the rhubarb then bake for 35 to 45 minutes until the top is golden brown. Serve hot with cream or ice cream if you wish.
