The French Madeleines love to be served with tea, but can also be served with a sweet wine. Now, the resting time of the dough in the fridge is essential because it allows the dough to harden a little, then inflate when cooking forming a dome in the center of the Madeleine….
First, here is the list of the different ingredients you will need to make the French Madeleines for 3 plates of 10 Madeleines
- 3 free range eggs or 2 small ones
- 100 g melted butter
- 75 g sifted flour
- 25 g potato starch
- 90 g brown sugar
- 1 Tbsp honey
- 2 tsp baking powder
- 1/2 tsp baking soda
Now, here are the few steps to will have to follow to make the Madeleines fines
Start by whipping the whole eggs in a mixer bowl with the sugar and honey. When the mixture is very foamy, add carefully the flour mixed beforehand with the starch, the baking powder and baking soda.
Finally, slowly add the melted butter while continuing to mix. Preheat the oven to 335°F or 170°C and put the preparation 2 hours in the fridge.
Put one Tbsp of the dough into the greased prints and put in the oven for 10 to 15 minutes or until the French Madeleines are golden brown.
Take the French Madeleines of the oven and 5 minutes resting time, place on a rack and enjoy.
