This Chocolate Cheesecake is an absolutely delicious dessert that melts in your mouth. So, nothing better than to try it right away. Eventually, the big “plus” of this cake is that it doesn’t need to be baked!
First, here is the list of the different ingredients you will need to prepare this Chocolate Cheesecake that serves 6 to 8 people
for the base
- 200 g of small digestive or small butter biscuits
- 100g butter
for the mixture
- 400 g cream cheese Philadelphia type
- 100 g icing sugar
- 250 g 55% dark chocolate
- 100 ml whipping cream
for the Ganache
- 90 ml whipping cream
- 80g dark chocolate
Now, here are the different steps you will have to follow to make this Chocolate Cheesecake with a preparation time of 25 minutes and… without cooking but 4 hours of refrigeration
Start by preparing your biscuit by crumbling the small biscuits on one side and melting the butter on the other side. Let the butter cool then add it to the biscuits. Line the bottom of your removable mold (24 cm / 10 inch in diameter) with this mixture and press well into the bottom of the mold. Refrigerate.
Melt the chocolate in a bain marie. Then, in a large bowl of an electric mixer, put the cream cheese, icing sugar and mix well. Then add the melted chocolate and finally the whipped cream.
Mix everything gently and transfer everything into your mold with its biscuit base. Equalize and refrigerate.
Meanwhile, make your ganache by putting the whipping cream in a saucepan. Heat until it starts to boil. Take off the heat and add the chocolate all at once. Mix well until your chocolate is smooth and shiny.
Pour your ganache over the chocolate cake and refrigerate for at least 4 hours.
Serve with fresh fruits and whipped cream if you like.
