Ingredients for 12 Cookies:
- 2 cups powdered sugar
- 2/3 cup unsweetened cocoa powder
- 1/4 tsp salt
- 3 to 4 egg whites
- 2 Tbsp corn starch
- 1 Tbsp vanilla extract
- 1 cup bittersweet chocolate chips
Preheat oven to 350°F ( 160°C). Prepare two baking sheets with parchment paper.
In a large bowl, whisk together sugar, cocoa powder and salt. Whisk in the egg whites, one by one and vanilla. Beat until the batter is moistened but still thick and fudgy. if it is too thick, add another egg white and continue whisking the batter. Add the corn starch.Then, stir in the chocolate chips.
Spoon your batter on the baking sheets in evenly spaced mounds and bake for about 15 minutes or until the tops are glossy and cracked. Slide the parchment paper on a wire rack and let the cookies cool completely, then peel the cookies away from the paper and store in an airtight container.
