This Apricot and Almond Cream Tart is the perfect dessert when it comes to enjoy a nice and tangy little tart at the end of a summer lunch. Just the right bite and not too sweet…
First, here is the list of the different Ingredients you will need to prepare the Apricot and Almond Cream Tart that serves for 6 people
- 2 sweet pastry doughs
- 6-8 apricots
- 1 sprig rosemary
- 90 g ( 6Tbsp) almonds
- 90 g (6 Tbsp) butter
- 100 g (1/2 cup) icing sugar
- 2 eggs
Now, here are the few steps you will have to follow to make the Apricot and Almond Cream Tart
First, preheat the oven to 180°C or 365°F. Remove the baking sheet from the oven and line it with a parchment paper. Mix the almonds with the butter, icing sugar and the eggs and beat well. Set aside.
Then, Roll out the first dough into a rectangle on a floured surface. Put it on the prepared baking sheet. With the other dough, cut strips that you put around your rectangle on top of the first dough to form an edge. Make them stick together with a small brush with water.
Spread the almond cream on your dough and put the apricot halves and a few sprigs of rosemary on top. Bake for 30 to 40 minutes or until golden brown.
