A late winter Dessert, with the flavour of Clementine juice that enhances those small but typically French Cakes called Financiers.
Serves 6 Cooking time 30 minutes
- 4 egg whites
- 5 1/2 Tbsp (80 g) ground almonds
- 4 Tbsp (60 g) flour
- 1/2 teaspoon baking powder
- 1/4 cup (100 g) butter
- 5 1/2 Tbsp (80 g) brown sugar (optional)
- Juice of 2 small Clementines
Preparation
Pour the egg whites in the bowl of a food processor and whisk, gradually add the flour mixed with yeast, sugar and almonds. Continue whisking vigorously. Add the melted butter. Whisk again and finally add the clementine juice.
Preheat oven to 400°F (200 °C). Pour into Financier moulds or mini cup cakes buttered beforehand and bake in hot oven about 20 minutes.
Once your Financiers are golden brown and puffy, take them out of the oven, let cool for 5 minutes and place on a rack and if you like sprinkle a thin layer of Clementine marmalade to give them a nice glaze and … Enjoy.
