Enjoying Goat Cheese and Thyme Crème Brûlée in these little individual pots of Crème Brûlée is a most attractive way to serve this dish. The soft goat cheese adds some tang but is enhanced by the thyme.

- 4 free range eggs
- 3/4 cup (200ml) double cream
- 1/2 cup (100 ml) milk
- 2 pinches of sea salt
- Freshly ground pepper
- 1/2 cup (100g) fresh goat cheese
- 3 sprigs of thyme
- 2 Tbsp (25g) brown sugar to caramelize.
Now here are the few steps you will have to follow to make these Goat Cheese and Thyme Crème Brûlée. Their cooking time is of 10 minutes + 40 minutes.
Preheat your oven to 212°F (100 °C). Start by Whisking the 4 egg yolks and 2 whites but without foaming it. Then, heat the milk and cream with the thyme sprigs.
After that, add salt and pepper. Let infuse. Gently add the milk and cream mixture, warm, over the beaten eggs and add the crumbled goat cheese. Spoon into ramekins and bake for about 40 minutes.
Now, after the 40 minutes cooking time, remove from oven and let cool.
Before serving, sprinkle with brown sugar and caramelize with a small torch, then serve with some fresh sprigs of thyme on top.
