For the Sweet Pastry
- 125 g (1/2 cup) flour
- 25 g ( 3 Tbsp) honey
- 50 g ( 1.5 oz) butter
- 1 egg beaten
For the filling
- 1 free range egg
- 50 g (1.5 oz) sugar
- 10 cl (1/3 cup) whipping cream
- 50 g (1.5 oz) ground almonds
- 4 prunes, washed, dried and cut in halve
Now, here are the different steps you will need to follow to make the Almond Custard Prune Tart
Prepare your dough by mixing in a bowl the flour and honey. Add the diced butter, then, the beaten egg. Mix until smooth. Make a ball, wrap it in a plastic wrap and chill about 1 hour.
Meanwhile, whisk the sugar with the egg until whiten. Then add and mix the whipping cream and the almond powder. Reserve. Preheat oven to 180 °C. (356°F).
Take the dough and spread it out between 2 sheets of parchment paper and line it on the greased and floured tin. Prick the pastry and pour the almond cream on top. Arrange plums on almond cream and bake for about 30 minutes.
