This Parsnip Soup is an ideal soup at the beginning of the year. Parsnip is an often forgotten vegetable but rich in fiber and antioxidants. Whether raw or cooked, parsnip reveals a pleasant sweet flavor. From the same botanical family as the carrot and native from the Mediterranean basin, it is moderate in calorie but on the other hand rich in many minerals and vitamins.

First, here is the list of the different ingredients that you will need to prepare this Parsnip Soup flavored with Thyme that serves 4 to 6 people

  • 2 parsnips
  • 2 potatoes, medium size
  • 1 carrot
  • 1 onion
  • 1 vegetable stock cube
  • 1 sprig of thyme, 1 pinch of cayenne pepper and salt

Now, here are the few steps that you will need to follow to make this Parsnip Soup with a 15 minutes preparation time and a 30 minutes cooking time

Start by Peeling the parsnips, potatoes and carrot. Cut them into cubes. Peel and slice the onion.

Heat a saucepan with a knob of butter and add the diced vegetables. Let them brown slightly then add the stock. Add the cayenne pepper, thyme sprig, salt and add 500 ml or 2 1/4 cups water.

Cover and cook over medium heat for about 30 minutes or until the vegetables are tender. Then mix everything with a hand blender until you get the desired texture and serve hot.
