This Mediterranean Socca or Chickpea Flatbread is originally from the Nice region, south of France. But it can be found throughout the Mediterranean basin. It can be served plain but also with olives, candied tomatoes or even zucchini tagliatelle… However, it can be made all year round since all you need is some chickpea flour! The best Socca is crispy and soft at the same time!
First, here is the list of the different ingredients you will need to prepare the Mediterranean Socca that serves 4 to 6 people
- 200 g or 7 oz chickpea Flour
- 300 ml or 1 1/3 cup water
- Olive oil
- Salt and pepper from the mill
- 1 tsp cumin seeds (optional)
- 1 tsp turmeric in powder
Now, here are the few steps you will need to follow to make this Mediterranean Socca with a 10 minutes preparation time, a 30 minutes resting time and 6 to 8 minutes cooking time
In a salad bowl, pour the water and half of the chickpea flour. Mix well with a whisk. Add the rest of the flour while mixing again.
In a frying pan, lightly toast the cumin seeds and add them to the dough as well as the Turmeric powder.
Let the dough rest for about 30 minutes. Then heat a frying pan with the Olive oil. When it is very hot, pour a ladle of dough and spread it with a spatula.
You can thus obtain the desired thickness. Then cook for 2 to 3 minutes on each side. Repeat the operation until the end of the dough. Serve quickly with the accompaniment of your choice. Enjoy !
