This Soft Peach Cake with Verbena Syrup is this homemade dessert, very simple to make but which, thanks to its verbena syrup, gives it all its “softness”! A summer dessert that everyone loves!
First, here is of all the list of the different ingredients you will need to prepare this Soft Peach Cake for 6 people
- 3 free range eggs
- 100g or 4 oz caster sugar
- 120 g or 4.5 oz flour
- 200 g or 7 oz melted butter + one knob for the mold
- 1 tbsp thick crème fraîche
- 50 g or 2 oz ground almonds
- 1 tbsp liquid vanilla
- 4 nice white or yellow peaches
For the Syrup
- 1 small handful of lemon verbena
- 1 knob of butter
- 50 g or 2 oz powdered sugar
- icing sugar, optional
Now, here are the few steps you will need to follow to make this Soft Peach Cake with Verbena Syrup with a 15 minutes preparation time and a 35 minutes cooking time.
Start by turning your oven to 180°C or 350 °F. Beat the eggs and sugar, add the flour, warm melted butter, cream, almond powder and vanilla. Mix well and pour this dough into a round or rectangular mold, buttered.
Peel and Cut the peaches into quarters and place them on the dough. Place in the oven and cook for approximately 35 minutes.
10 minutes before the end of cooking, put the verbena in a small saucepan with 150 ml or 2/3 cup water and the 50 g or 2 oz sugar and boil for 6 to 8 minutes or until you obtain a syrup. Add the knob of butter off the heat.
Remove the cake from the oven, pour the syrup over it and let cool a little before serving. Finally, sprinkle with icing sugar if you like.
