Discover this Pink Praline Galette or Galette aux Pralines roses, as it is named in France. It is an exquisite interpretation of the traditional King’s Galette or Galette des Rois. Enjoy a symphony of flavors combining the crispness of the puff pastry with the sweet richness of the pink pralines.
First of all, here is the list of the different ingredients you will need to prepare the Pink Praline Galette for 6 to 8 people
- 2 rolls of 1st choice puff pastry
- 100 g or 4 oz almond powder
- 120 g or 4,5 oz pink pralines ( almond covered with a pink candy )
- 100 g or 4 oz soft butter
- 10 cl or 1/2 cup milk
- 2 Tbsp vanilla sugar
- 1 whole free range egg and 3 egg yolks
- 12 g or 1 Tbsp cornstarch
- 1 bean – fève
- 4 drops red food coloring (optional)
Now, here are the different steps that you will have to follow to make this Pink Praline Galette with a preparation time of 25 minutes and a cooking time of approximately 30 minutes.
Start by crushing the pink pralines. Then, gently mix the butter and almond powder. Add the whole egg and 1 yolk.
Dissolve the cornstarch with the milk in a small saucepan. Add an egg yolk and the vanilla sugar. Thicken for 5 minutes over low heat, stirring constantly. Mix with the almond cream and crushed pralines.
Pour your first puff pastry to within 2 cm of the edges with the praline-almond preparation. Place the Bean – Fève and moisten the edges. Cover with the 2nd puff pastry dough and press the edges. Make a small hole in the center to let steam escape.
Mix the egg yolk with the coloring food if you like. Brush the top of the Galette with it. Draw patterns with the tip of a knife without piercing the dough. Place in the refrigerator for 30 minutes. Preheat your oven to 200°C or 400°F.
Finally, after 30 minutes, bake your Galette for 5 minutes in the preheated oven at 200°C or 400°F. Reduce the temperature to 180°C or 350°F and continue baking for another 25 minutes or until well baked.
Once out of the oven, let the Galette cool down then serve on a nice and large dish. Enjoy !
