Serves 2 Cooking time 25 minutes
- 4 large free range eggs
- 1 onion
- 2 Tbsp olive oil
- 4 small tomatoes, peeled, seeded and cut up
- 1 Tbsp pastis
- 1 Tbsp chopped parsley
- Salt and fresh pepper
Chop the onion finely. Let it melt over low heat for 10 minutes in a pan with one tablespoon of olive oil. Add the 4 small tomatoes broken up and finally the salt and pepper.
Bake about 10 minutes then add the tablespoon of Pastis and parsley, continue to heat for a few more seconds and then keep warm in a bowl.
Beat the 4 eggs with 1 tablespoon of water, salt and pepper. Heat oil in a small pan, pour half of the omelet and cook it quickly. Place half the onion-tomato preparation on half of the omelet. Fold it and slide it onto a warm plate.
Repeat the last part to make the second omelet.
Serve promptly and enjoy.
