Watercress soup is particularly popular in winter. The incomparable flavor of watercress, fresh and tangy, awakens the taste buds with its peppery taste. It is an excellent source of vitamins A, K and C. It also contains significant amounts of fiber. Finally, this aquatic plant contains a record level of iron and calcium.

- 2 bunches of watercress
- 1 shallot
- 50 g butter
- Salt and pepper from the mill
- whipping cream (optional)
Now, here are the few different steps you will need to follow to make this Watercress Soup
Take the bunch by the stems and soak the leaves in water to which you will have previously added white vinegar. Shake the boot and put it in the wringer. Cut the stems flush with the tie that holds the boot.
Peel and slice the shallot. Melt the butter in a casserole dish, being careful not to burn it and brown the shallot. Cook for 2 minutes, stirring constantly with a wooden spoon until the shallot is lightly coloured .
Add the watercress to the casserole dish. Stir everything then salt and pepper to your liking. Let sweat for about 5 minutes. Pour 1 liter of water into the casserole dish, so as to completely cover the watercress, then bring to the boil before removing the mixture from the heat.
Mix the soup finely using a food processor and put it back on low heat. Incorporate only at this moment the whipping cream (optional) while stirring. Continue cooking for 5 minutes without letting it boil. Serve your watercress soup very hot. You can accompany your soup with small garlic croutons if you like.
