This Fig Chutney that I am offering you today has a preparation that takes only a short time to make and you can keep your jars until the following year if kept in a dry place and protected from sun light.
First, here is the list of the different ingredients you will need to prepare the Fig Chutney for 6 to 8 small jars
- 1 kg fresh figs
- 400 ml or 1/2 cup apple cider vinegar
- 1 candied lemon
- 60 g or 2,5 oz onions
- 250 g or 9 oz cane sugar
- 1 tbsp ginger, 1 hint of black pepper, 1 tsp salt
- One cinnamon stick and 5 cloves
Now, here are the few steps you will have to follow to make the Fig Chutney
Start by cleaning the figs and then cut them in four. Peel the onions and chop finely.
Then, in a large saucepan, mix the vinegar and sugar. Over high heat, wait until everything is melted and stir occasionally. As soon as the sugar is melted, lower the heat and add the onions then the figs, salt and spices.
Bring everything to a boil then put on low heat and simmer for about one hour. Stir frequently.
At the end of the cooking, mix a little the mixture if the fig pieces seem too large, then pour into small jars and cover.
