A Vegetable Millefeuille …. Usually the name of millefeuille is used in pastry. It applies here to a dish made up of several thin slices of different vegetables placed on top of each other. The dressing sauce offered allows you to better enjoy the subtle tastes of steamed vegetables.
First, here is the list of the different ingredients you will need to prepare the Vegetable Millefeuille that serves 4 to 6 People
- 2.2 pounds or 1 kg large potatoes with firm flesh
- 2.2 pounds or 1 kg carrots
- 1 pound or 500 g fresh spinach
- Fresh herbs: chives, parsley, tarragon
- 3 Tbsp or 50 g chanterelles pickles
- Salt
For the Vinaigrette
- 2 tbsp balsamic vinegar
- 3 tablespoons olive oil
- 3 tbsp grape seed oil
Now here are the few steps you will need to follow to make the Vegetable Millefeuille
Start by cutting, using a mandolin, the potatoes and carrots into thin strips. Steam them. The potatoes should be well cooked and the carrots tender.
Blanch the spinach and season it. Butter a rectangular tin and line it with plastic wrap.
Lay layers of potatoes, carrots and spinach in your tin, alternating them. Press for 4 hours then cut the millefeuille into 4 or more rectangles, depending of the size you want.
Prepare the vinaigrette by mixing the ingredients. Just before serving, heat the millefeuille in a steam cooker. Taste lukewarm with the vinaigrette, garnished with a few pickles of chanterelles and fresh herbs from the garden if you like.
