Begin by chopping the spring onions, then heat the oil in a cocotte. Add the meat, then the butter and sear the beef fillet 2 minutes each side.
Remove the meat from the cocotte, rub it with turmeric, then put the beef in a shallow dish. Add the chopped onions, the Teriyaki sauce, the soy sauce and the mirin. Cover and let marinate for 6 hours in a cool place, turning the meat often.
Finally, before serving, drain the meat, pat dry and slice thinly. Peel and pit avocado and cut also into thin slices. Finely, cut the cucumber in thin slices having taken off the seeds.
When serving, place the meat and avocado slices on a serving dish, add fresh salad shoots, cucumber slices and chopped coriander. Finally, grate the lime zest on top and serve immediately with the marinade on the side.
