This Celeriac and Pomegranate Salad can be called an early Spring Salad. The strong taste of celery matches very well with these pomegranate seeds, full of colour and fragrant.

- 1 celeriac, peeled and quartered
- 1 prepared pomegranate
- 20 cl or 3/4 cup single cream
- 2 tablespoons french mustard
- Salt and freshly ground pepper

Peel cut the celeriac in four big quarters and cook the celeriac in boiling salted water for 4 to 5 minutes to soften it and make it lose its odour. Let it cool. Then cut into thin strips or simply grate.
After that, put the mustard in a bowl. Stir and add the cream. Add salt and pepper. Season the grated celery with your tangy sauce and let marinate for about one hour.
Finally, add your pomegranate seeds and serve immediately. It is fresh and juicy. You can serve this salad as an appetiser but also as is to accompany a cold meat.
