Mamima’s Cheese Pie is a very simple fare made with a minimal number of ingredients. Don’t hold back using mature or very mature cheddar to bring out the flavour of the cheese even more.
First, here is the list of the different ingredients you will need to make the Mamima’s Cheese Pie that serves 6 with a Preparation and Cooking time of 60 minutes
- 7 oz (200 g) short crust Pastry
- 2 free range eggs
- 1/2 cup (125 ml) single cream
- 1/2 cup (125 ml) semi skimmed milk
- pinch of sea salt and freshly ground pepper
- 1 cup (220 g) mature cheddar roughly grated
Now, here are the few steps you will need to follow to make the Mamima’s Cheese Pie
Preheat the oven to 400°F (200°C). For preparing the pastry, see Astuce/Tips. Then press out the dough to fit a lightly greased large flan tin. Prick the dough with a fork and refrigerate for 20 minutes.
Bake the dough in the oven for 10 minutes, then remove and allow to cool, leaving the oven on. For the filling, beat together, the eggs, cream, milk, salt and pepper in a large bowl. Sprinkle in the cheese, mix well and pour into the cooled pastry shell.
Bake in the oven for around 30 minutes or until puffed and golden. Serve warm with a side salad if you like .
